Hello
I'll try to keep it short. 
14 days ago while in a strip club the stripper and j were both naked. I was lying down and she sat her naked vagina on the bottom shaft of my penis. There was no grinding, just some light pressure. Lasted about 3 seconds before I removed myself from the situation. 
That's pretty much the summary. Questions:
I've seen that STDs that can happen from this are HSV which concerns me cause there is no cure. I called a local STD clinic here and they said symptoms for herpes can start anywhere for 2-28 days. Then I've seen on here 2-10 days. 
I have had some burning skin and seen a dermatologist for it and he called it some dermatitis? I do have some weird sensations down there and random times of burning skin. I have not seen any blisters or clusters of bumps 
Being that I'm 14 days removed from the exposure am I 50% through the waiting phase?
Does the burning skin sound like a symptom?
If I did catch them from this exposure, would they appear at the site of contact of could they possibly effect the whole region?

I should add that the burning skin has been on the head of my penis, in my creases, sometimes my thighs.

I'd also like to add I woke up in the middle of the night last night with the chills and felt like I was going to vomit. Are these flu like symptoms

I have been doing some research on this site and I've seen you say normally it takes 2-10 days to develop symptoms but some people do not develop at all. What is the likelyhood of not developing symptoms at all?

The encounter that you describe above presents virtually no risk.  The encounter was so brief with no penetration and very little actual skin to skin contact, from your description.
The burning skin that you describe could honestly be most anything - I don't think it is helpful in trying to sort out a possible herpes diagnosis at all.
And yes, if no lesions have developed in 2-10 days, particularly given the nature of your encounter, I think herpes acquisition is incredibly unlikely here.  Flu symptoms associated with herpes are not nausea but rather influenza type symptoms - muscle aches, fever, sensitivity to light, that kind of thing.
Your symptoms do not sound anything like herpes to me.

Is it possible to have caught herpes and not developed symptoms?
I have been checking nearly 5x/day to see if I have blisters and haven't seen any. Could I have missed it?
Is it worth me getting tested IGG and if so how accurate is it at 6 weeks or 8 weeks?
Is it safe to have sex with my wife if I haven't seen blisters?
Is there an atypical presentation of herpes or is it always blisters?

Is it possible?  Maybe on in 100,000 chance. 
I seriously doubt that you would have missed symptoms if they had been there, no.
No, I don't believe it is necessary to be tested.
I don't believe that having sex with your wife is a risk to her.
There are atypical presentations, yes, raised red areas, linear cuts, things like that,but again, your risk of 3 second of non-penetrative contact?  Just doesn't worry me a bit
