How can I make my boyfriend feel safe to have sex with me. Besides just me being on antiviral medications and using condoms?

I've gone back quite a ways and don't see another post by you.  I am going to assume that you have HSV, but I don't know what kind you have.  Do you?  It would be helpful for me to know as the type you have and how you were diagnosed will help me answer your question in the best way possible.

I have herpes 1, I was dx back in 2019 by having a breakout. I’ve only had one breakout and the person who gave it to me claims they don’t have it.  But I started taking antiviral medications but I want my partner to feel comfortable as he can be.

And I am assuming that your current partner is testing negative for HSV 1?
Right now, you are shedding infrequently, and by the time you've had this for two years, you will only be shedding, on average, 4 days out of the whole year.
Daily suppression would likely be a little benefit, but perhaps more a psychological benefit more than anything?

If I give my parent oral, without a condom is he chances still the same if I was not on antiviral medication'?

Being on daily medication will reduce the chance of infecting your partner vs. no medication.  I am thinking that the other post with the same name is you.  I'm unclear if you have oral or genital infection? Can you clarify in your other post please?  I'm going to close this one for now.
